Using history and humans’ relationship to the environment as a starting point to better understand how dietary rules are made over the centuries, this monograph published by the Louis Bonduelle Foundation is an attempt to understand the way societies structured themselves around meals, how they established modes of communication and sharing between members of the same community, and according to which modalities societies will attempt to pass on their best practices to their descendants in the near future.
