Why don’t consumers apply nutritional messages?
Maybe that’s just it—because they are being ordered to do so. For questions related to nutrition, there are many responses from multiple disciplines. Nutrition is a complex science and an anxiety-provoking subject which touches on the private life and entire history of an individual. It touches on multiple sensitive subjects: social environment, psychology, and interpersonal relations, especially with the mother, family, and social group. Wouldn’t it be appropriate to study these questions before trying to modify dietary behaviors?
This monograph, edited by the Louis Bonduelle Foundation, was not written to provide definitive solutions to dilemmas or the questions mentioned about nutritional messages. It offers some parts of the answer, though it is clear in advance that another major work of compilation will be needed in the near future to complement this one.
