A light vegetable to crunch
Very low in calories, soybean sprouts (or mung beans) are full of water. You can eat them as much as you want!

Vegetable patch or urban balcony?
Soybean sprouts (mung beans) are very easy to germinate at home. You need water, a closed container and mung beans (they look like small green beans).
First, swell the mung bean grains by letting them soak in water overnight, in a container away from light. Then, simply empty this water every morning to let the sprouts develop during the day, and add water in the evening until the next morning when you repeat the same operation.
The sprouts will develop in 2 to 3 days, changing from green to white, with a yellow tip (the cotyledons).
Choosing and storing
To choose your bean sprouts well:
- They should be very white and shiny, with a bright yellow tip.
- The sign of freshness: the shoot should break with a dry sound.
To properly store your bean sprouts:
- Always keep away from light ! Otherwise the sprouts will turn green.
- In the refrigerator: 1 to 2 days in the vegetable drawer.
Tips and tricks
The bean sprouts are being prepared…
Nothing could be simpler! A very quick rinse is enough. You can eat sprouts cooked for a few minutes or raw. The most common method of preparation is in a wok or frying pan, in less than 5 minutes, with other crunchy vegetables.
Do not keep sprouts that have turned brown: they are oxidized and have lost their taste and nutritional qualities.
Bean sprouts go well with…
Raw. Added to carrots, peppers, bean sprouts go well with all raw vegetables to provide fresh and crunchy salads.
Cooked. They go wonderfully with pasta or noodles, in combination with sliced vegetables: zucchini, carrots, peppers, eggplants, leeks… They are essential in Asian dishes, such as Chinese pork, with peanuts or cashew nuts, and in spring rolls.
Is bean sprouts for everyone?
Toddlers
They can be consumed from 24 months for babies, to avoid the risk of choking. Older children will appreciate its fresh and crunchy side.
