The theme of the Louis Bonduelle Foundation Conference 2019 was “Plants in Food Systems and Sustainability: A Balancing Act.” At the event, a large expert panel on nutrition met to take stock of the worldwide trend toward a more plant-based diet.
To continue the discussion on the role of a plant-based diet in addressing issues facing society, we met with Quebec nutritionists Marjolaine Mercier and Anne-Marie Roy, co-founders of the Association des professionnels de santé pour l’alimentation végétale (APSAV), an association of health professionals that promotes plant-based eating.
