Pear salad, carrots, zucchini and sautéed peppers

A light and tasty recipe low in calories, ideal for summer meals. This starter contains 3 essential vitamins that will contribute to the normal functioning of the immune system.  

Ingredients (serves 4):

Instructions:

  • Finely slices the carrots, zucchini and peppers and then dice the pear.
  • Mix everything into a bowl with the olive oil, fresh mint and parsley. Then fry the whole in a pan for 5 minutes.
  • Pour into small cups.

Add some lemon juice to give a bite of acidity to the dish.  A recipe costing less than 5 Euro and accessible to all.
