A mixture of vegetables helps you to make the most of the complementary benefits of carrots (provitamin A), peppers (vitamin C), green beans, courgettes (vitamin B9) and fibre. Just add a few spices for a proper slow-cooked vegetable dish in only 10 minutes.
Ingredients (serves 4):
- One bag of mixed frozen vegetables
- 1 tbsp curry powder
- 2 tbsp fresh cream
- 1 pinch salt
Instructions:
- Place all the ingredients: frozen vegetables, salt, curry powder and fresh cream in the bottom of a pressure cooker.
- Place over a high heat and time 10 minutes from when it starts to whistle. Mix well and serve hot.
Use chilli powder for people who like things spiced up a little or coconut for a touch of sweetness with these very exotic vegetables!
